Mini Pancake Kabobs

  1. Heat the pan to medium heat.
  2. Combine the heaping 1/2 cup of the original pancake/waffle mix with 2-4 tbs of water. Mix then let the batter sit for 30 seconds.
  3. Spray a nonstick cooking spray on pan. We use coconut oil.
  4. Pour the batter into 1-2 inch pancakes.
  5. Cook the mini pancakes for 1-2 minutes on each side or until cooked through.
  6. When fully cooked, remove the mini pancakes and place it on your plate.
  7. After the mini pancakes are cooled down, start assembling your kabobs.
  8. Plate and then Enjoy!
