Keto-Berry Waffles

  1. Heat waffle maker to medium heat.
  2. Combine a heaping ½ cup of the pancake mix with 1 egg, 2-3 Tbsp of water, and 1.5 Tbsp of melted coconut oil or butter per serving.  Mix, then let the batter sit for 30 seconds.
  3. Spray nonstick cooking spray on the surface of the waffle maker.
  4. Pour the batter into the waffle maker until the surface area is covered.
  5. Close waffle maker and cook as instructed
  6. Top with berries and sugar-free syrup and enjoy!
